Find a good locally made double cream brie cheese as this will provide more flavour, texture and depth to the finished product.
1)Preheat oven to 350ºF.
2)On smooth side of brie cheese, make a slight incision (about 1/4”) and run your knife in a circle about ½” away from edges of rind. Make a cross hair on top of the cut rind.
3)Place cheese on parchment paper and place onto baking tray. Place in the oven for 5 – 10 minutes of until cheese is soft enough to remove rind.
4)In the meanwhile, in a small bowl, combine together crushed walnuts, honey, goji berry compote, pinch salt, pinch nutmeg and a pinch of cinnamon.
5)Remove the brie cheese from the oven and peel off the top rind, making sure not to remove a lot of cheese with it. Evenly spread the mixture into the middle of the cheese and bake for another 20 – 25 minutes or until cheese begins to bubble from the sides.
6)Lift the brie cheese gently every 8 – 10 minutes to ensure it isn’t sticking.
7)Check every few minutes to ensure the top of the brie cheese doesn’t burn
